Have some nice expansion ore patches and oil (purple dots) not very far away. Max out the moisture bias. This will make the entire world greener and reduce pollution spread. Either disable biter expansion, turn off pollution or disable biters entirely. Default settings are fine for a beginner.

My advice is to set the generator settings to this: very big and frequent water, normal-big starting area. If it doesn't give you a peninsula, you still will have something with decent choke points.
